Pumpkin Pie from Scratch
There is nothing like a homemade pie, if you have the patience for it!
Ingredients:
Pumpkin Pie
1/2 cup brown sugar
1/2 teaspoon nutmeg
3/4 teaspoon salt
2 eggs, three yolks
20 oz. roasted sugar pumpkin
1-1/4 cup half and half
1 batch of pie dough
Roasted Sugar Pumpkin
1-1/2 tablespoon salt
1-1/2 tablespoon organic cane sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1 small sugar pumpkin
Steps:
Roasted Sugar Pumpkin:
Preheat your oven to 375 degrees
Blend all the seasonings together well.
Remove the stem from the top of the pumpkin. Use a large, sharp knife to cut the pumpkin in half from top to bottom.
Remove the seeds and pulp from the inside pf the pumpkin, and cut the pumpkin halves in half from top to bottom. You will know have four quarters of pumpkin.
Cut each quarter into three wedges, for a total of twelve
Season each wedge generously with your seasoning mix on both sides and let stand at room temperature about 20 minutes to an hour. The pumpkin wedges will begin to weep a little — which is good. Just make sure you keep re-seasoning the wedges to use up all of the seasoning mix to ensure each wedge is fully seasoned.
Place on a non-stick baking pan and roast 45 minutes to one hour, or until the pumpkin feels tender. Remove from the oven and let stand until cooled.
Use a knife or even a spoon to remove the skin from the outside of the pumpkin wedges. The pumpkin is now ready to turn into pie!
For the Pie:
Preheat your oven to 425 degrees
Combine the sugar. Nutmeg, salt, eggs, roasted pumpkin, and half and half in a food processor. Pulse until smooth and well-blended.
Lightly grease a pie dish with cooking oil or butter. Roll the pie dough out to a round that fits your pie dish with about an extra inch in diameter for crimping (or use a store-bought pie dough round).
Evenly distribute the blended pie filling throughout the dish.
Place the pie on a rack set at the center of the oven. Immediately turn the oven temperature down to 375 degrees. Cook for 30 to 40 minutes, or until a toothpick stuck int the center of the pie comes out clean.
